How to Kiwi Vanilla Protein Mousse by Michele:

  1. Combine all ingredients except for the wheatgrass in a bowl
  2. Stir well
  3. Put it in the fridge at let it chill for 4-5 hours. (Due to the psyllium husk your soy yoghurt turns into a very thick and solid consistency.)
  4. Add water/milk until creamy
  5. Put the half of the yoghurt into a separate bowl
  6. Add wheatgrass and stir well
  7. Layer in two small or one big jar
  8. Add toppings like fruits, Granola, popped quinoa or anything you like
  9. Enjoy!
