Lemon & Blueberries Protein Pancakes
Lay out all ingredients on your table.
Grate one lemon for fresh zest.
Whisk STRIPPD Protein Pancake Mix Vanilla hint with coconut milk in a bowl.
Add 1 tsp of lemon zest and mix until well incorporated.
Add in the blueberries and mix well.
Leave batter to rest for 2 min.
Pre-heat a pan with a light coating of coconut oil.
Cook pancakes gently for 1-2 min on each side until golden.
